Autumn brings with it a sense & yearning for warmth and cosiness. For me, other than a hot pot of tea – constantly refilled throughout the day, pies and pasties are the quickest route to this goal. You can just chuck anything in them, and as long as you have a bit of garlic and onion, some salt and pepper, you are laughing.
At the weekend – I posted these delightfully easy chicken and pesto pasties. Little pouches of joy would also be an appropriate pseudonym. They take about an hour to make – but don’t worry most of that time is allowing the pastry to chill in the fridge. If you aren’t feeling up to making you own pastry… then just buy some! But, the pastry is pretty easy… and the taste of something completely homemade is extremely comforting I find.
